All I can think of is trimming as many variables as possible. Grab the newest version of SNES9x GX, clear it off of your hard drive, take the 'clean' download and put it on the HDD, give that a try and see if it works better.

Unless I'm mistaken, Cocoa is accessed with Objective C, which is a superset of C and C++. That means if you want to code for OSX, you'll need to learn C anyways. I think the Evo 3D is still too new to have significant CFW support. Scuttlebutt in the CyanogenMod forums is that it'll take about a month for a version of that, and a lot of functionality will be lost (probably including the 3D).

Currently there is no way to bind keyboard keys to multiple players. You can, however, use the integrated Wiimote detection for players 2 through 4.
